Ingredients


True Neapolitan pizza is made with San Marzano or Campania tomatoes which grow on the volcanic plains to the south of Mount Vesuvius. The dough must consist of wheat flour (type 0 or 00, or a mixture of both), natural yeast or brewer's yeast, salt and water. 

It must be kneaded by hand or with a low-speed mixer. After the rising process, the dough must be formed by hand without the help of a rolling pin or other machine, and may be no more than 3 millimeters about

(0.12 in) in thickness.  It should be fragrant and soft with a high degree of moisture.

History


In 1889, during a visit to Naples, Queen Margherita of Savoy was bored with French gourmet food, which was the traditional royal fare of Europe rulers. While staying in Naples’ Capodimonte Palace, she saw many of the local people eating large flatbread and grew curious. 

According to legend, Queen Margherita summoned the most famous pizza-maker in Naples, Raffaele Esposito, to bake a variety of pizzas. Her favorite was the one with tomatoes, mozzarella slices, and basil, which was made in her honor and  contained the colors of the Italian flag
